Let Her Eat Cake...bringing back a Memory

 Insomnia... I have it quite often... for once I was happy it happened.  I was trolling my FB page and saw a post about my fiend Hannah in England baking cake vs. cupcake. I had a flashback to the 70's of Ice cream cone cupcakes and made the suggestion..YAY she made them... then I did.. :D
  There was a big trend back in the 70's (when I was just a wee little Wheezy) about baking cupcakes in the old style ice cream cones.  It avoided the messy little papers, kept little hands cleaned, saved on clean up, and were darn cute.  It was nice after having some nasty memories float forward to have a great one leap to the top.  So for my baby Lassie's fifteenth birthday I made her some.
Angel Food Ice cream cone cupcakes

24 old fashioned cone cups (any color or flavor)
8 egg whites
1/2 cup sugar
1 cup flour
4 cups powdered sugar
1 (8oz) cream cheese
1/4 cup butter
splash milk

Preheat oven to 325 degrees
Set cones in casserole dish to hold upright
Whip 8 egg whites to stiff peaks- then add sugar



gentlely fold in flour a little at a time to avoid lumps


Batter should be nice and stiff.. I use little scoop for inside cone then big scoop for top. Since the batter is stiffer you can make them a little higher. If you use regular cake batter then leave 1/4 inch from top of cone or it will run over and make a mess.
Bake cones for about 5 minutes cake will be lightly browned and look nice and dry inside.

Let these cute little pups cool... Let's whip some frosting..
Whip softened cream cheese until fluffy, throw in butter, and whip whip whip.
Slowly (and I mean slowly) add powdered sugar  ( add too much at too high of a speed and POOF  powdered sugar everywhere)  when nice stiff frosting add just a splash of milk for creamy .
When cones are complete cool  frost anyway you want! have fun!

Chicken Sausage Pasta with Peppers and Onions

OKAY I have followers .. I guess that means I should write something....
 As soon as I figure it out I will be posting food porn to go with this so be patients.
  Tonight was an eclectic affair.. being that I made 5 pounds of taco meat (now half gone :D)
but I ended up having licorice for dinner last night because taco meat no matter how healthy I make it does not seem to agree with me causing such a lovely allergic reaction. And being that it was a lovely but very unhealthy dinner I made up for it tonight.
  So after fixing three tacos with sour cream, french fries and corn for the boy I got into my groovey Wheezy thing and Pasta'd it up

Simple recipe... organic , lowfat, low sodium, but LOL for my friends that LIKE  the goodie stuff  YES kick it up for yourselves

 Trader Joe's Chicken Apple sausage (2) ... No Trader Joes doesnt sponsor me :P just were on sale just use whatever the hell sausage you want  (they were tasty however)

2 cups sliced Onion
2 cup Sliced bell pepper ( make it freakin pretty and use different colors)
1 can S&W Diced Organic Tomatoes (dont groan it was what was in the pantry)
garlic (lots and lots and lots if you are me)
1 cup dry whole wheat pasta (see note on tomatoes)
1 tsp parmesan

boil some water.. for those of you that have advanced cooking skills you might want to read ahead a few steps baby steps people we all cant run kitchen marathons.... now, just a little pot will do.. you arnt feeding the gladiators.... when it boils dump in the pasta.  cook 10-12 minutes until pasta is your style tender drain and set aside
 In a Pot.. Medium pot .....nonstick....dump in the peppers and onions... stir them around in a happy little mess until they start getting tender.  slice up them there sausages and put them in with the onion stuff.
  Dont forget to open the can and dump them there tomatoes in too heat it on up on Medium heat and season it up with some garlic toss in your pasta and cheese (just enough for a mellow bite) get it nice and hot.. and Wowzee your dinner is ready
A nice salad, some steamed green beans (quit saying eww Ron and Baboo) IT  ????? FOR DINNER
  So this was an experiment. I REALLY wanten sausage pepper and onion pizza but well if my Butt wasnt the size of Texas and my stress level matches better stick with safe
  NEXT TIME  Im throwing in some zucchini, celery and some nonfat yogurt for some creaminess.. I will of course let you know how this works (provided I havnt huddled crying by then)

Why Why oh Why

Okay .. so what's it about.. the overwhelming need to share what's going on in my tiny little brain. If they can have a restaurant blogger on kitchen nightmare's why the heck can't I blog?? Ok here comes the warning label
I AM NOT A WRITER, DO NOT CLAIM TO BE,   I dont care about my grammer or spelling.  Y'all wanna read the crap that comes out of my tiny little brain FEEL FREE :D
 Second part of the warning... some recipes will be ultra healthy, some not.. I will try to include nutritional information.   I make no claims if you will like them or not... I dont know what you eat .
 This is new for me... if I disappear suddenly y' all were too harsh and I am curled under the blankets crying my eyes out
